When troubleshooting issues, it is important to remember our 4 GOLDEN RULES. Adhering to these rules will usually make sure your experience using the product will be flawless
4 Golden Rules
Safety- Safety first. When dealing with hot oil, make sure you are properly equipped with heat resistant gloves, the right stirring equipment, and heat resistant eyewear.
Temperature- The powder should be poured into oil between 160-175C. Higher temperatures than cause the oil to burn and break down quickly, and prevents the powder from filtering the oil optimally.
Stir- After pouring the powder into the oil, stir vigorously for 1 minute in each direction. Since the powder is heavier than the oil, it will sink to the bottom (as it should). Stirring it will help the powder immerse itself in the oil for longer, thus contracting all the harmful materials and sinking them to the bottom.
Scrub- When cleaning the fryer and all the peripheral equipment, make sure no harmful chemicals are used. If for whatever reason a chemical is used, make sure to scrub down the fryer with soapy water, then wash it with water only. After washing it, make sure to dry it out. Any evidence of water can cause oil to break down rapidly and cause a spike in TPM.
The powder is not dispersing in the oil properly
Reason
Oil is not hot enough.
Beyond Oil powder is not poured into the oil correctly.
Solution
Please check that the oil is hot enough. Beyond Oil’s powder works best at a temperature between 160 -175C. If the oil isn't hot enough, the powder will not disperse properly.
When applying the powder, make sure to pour it in one corner of the vat, from a short distance. There is no need to scatter the powder over the oil. Stir the powder in the oil thoroughly for 1 minute in each direction.
Oil is not returning to the VAT after filtration
Reason
The issue could be electric, mechanical or the filter program you picked isnt adjusted.
Solution
When applying the powder, make sure to pour it in one corner of the vat, from a short distance. There is no need to scatter the powder over the oil. Stir the powder in the oil thoroughly for 1 minute in each direction.
Pump up time exceeds 4 minutes
Reason
The oil filtration pipes are not clean. This not only lengthens the filtration process, it harms the circulation of the oil and the process with Beyond Oil powder.
The filter paper might be installed incorrectly (under the mesh screen).
Solution
Do a boil out and clean the filter at the end of the filter drawer.
Make sure the filter is installed properly.
Oil is cloudy upon returning to the VAT
Reason
The filtration process is not working correctly.
The filter paper is not installed properly.
You are using the wrong size or type of filter paper.
Fat or oil solidifies in low temperatures.
Solution
Check the filtration process with chain’s manual.
Make sure filter paper is installed correctly.
Make sure the filter paper covers the bottom of the filter drawer and folds up creating a barrier around all the edges of the drawer.
Higher the temperature of the oil.
TPM spiked
Reason
TPM monitor is not calibrated.
The TPM measurement is not being done correctly.
The Beyond Oil protocol is not being followed.
Solution
Calibrate TPM monitor.
Make sure to check TPM in the following manner- at the same time every day, after doing a full filtration process (Polish) with Beyond Oil powder, top off the oil and wait 10 minutes after the oil has reached “drop” temperature. This will ensure an accurate reading.
Follow the Beyond Oil protocol, including our 4 GOLDEN RULES to make sure you get the most out of the Beyond Oil Powder.
Product is too dark
Reason
Oil has broken down.
Frying temperature is too high.
Frying time is too long.
Recipe is wrong.
Solution
Replace oil.
Lower frying temperature.
Reduce frying time.
Remake the recipe, carefully following instructions.
Filter machine is dirty at the start of the day even though it was cleaned at end of day
Reason
The oil in the vat was not filtered properly
Solution
Do a last filter at the end of the shift. This will ensure that all unwanted particles are in the filter drawer, and then take the filter drawer to wash.
Beyond Oil Powder disperses in the air when I pour it and it flies all around the kitchen
Reason
Powder was poured in the oil incorrectly.
Solution
Pour Beyond Oil powder from a short distance to the oil, in one corner of the vat. It will disperse in the oil by itself. Beyond Oil’s powder is made of low weight particles which fly in the air. While the powder is food safe, you should clean anywhere where there is powder that is not in the oil.
Oil level is low after filtration
Reason
Oil pumping process was stopped before it finished.
Filter drawer is not installed correctly.
Oil return system is working improperly.
Oil return system is dirty or clogged.
Solution
Restart the oil pumping system and check if there is oil in the drawer.
Install the filter drawer correctly.
There are small rubber gaskets in the oil return system. Make sure they are not worn or torn. If they are, contact your chain’s technical support.
Do a boil out. This will clean not only the vat but also the entirety of the system.
After stirring powder into oil, fryer won’t go into Filtration mode
Reason
The temperature reading of the oil is low, because the heating elements were raised.
Solution
After stirring Beyond Oil powder into the oil for 1 minute in each direction, lower the heating elements back to the oil, let the temperature rise and try to activate Filtration mode again.
There are powder sediments at the bottom of the vat
Reason
The sediments you see are food remains from the frying.
After stirring Beyond Oil powder into the oil, and draining the oil, some powder will settle at the bottom of the vat.
Solution
Make sure to frequently skim the oil, especially before doing a filtration process.
Also, while the oil is draining, push the sediments you see into the drain opening so that it will go down into the filter.
The oil seems really dark
Reason
The oil has broken down.
You are frying products with dark spices or sauces.
Vat is not clean.
Solution
Replace oil.
While the oil may seem dark, if it is not opaque and you are properly working with Beyond Oil powder it does not necessarily mean the oil is bad. Check your TPM reading and the final fried product to make sure.
Make sure the vat has not discolored from regular wear and tear.
What’s the best instrument to stir the powder in the oil?
We recommend using a tool that is wide and can create a cyclone effect in the oil. A skimmer with a rectangular mesh screen is ideal.
